This is the dinner for the night you have ten minutes of energy. Everything goes into one baking dish. There is no flouring, no frying, no standing over a pan. You whisk together a honey garlic sauce, pour it over the thighs, and the oven turns it sticky while you get on with the evening.
It serves four from six bone-in thighs, and it takes about forty-five minutes start to finish — ten of those are yours, the other thirty-five belong to the oven.
Why pat the chicken dry first?
Because wet skin steams instead of glazing. A minute with paper towels is the difference between sauce that clings to the chicken and sauce that slides off it into a watery pool in the dish. Then lay the thighs in a single layer — piled up, they steam each other.
How do you get that sticky, caramelised top?
Bake uncovered, baste once halfway through, and then finish under the broiler for the last two to three minutes. That short blast is what takes the honey from glossy to properly caramelised. Watch it — honey goes from perfect to burnt quickly.
The chicken is done when it is tender and the middle reads 165°F (74°C). If you would rather use breasts, Bobbie's own note says cut the cook time to 20 to 25 minutes.
What to serve it with
Bobbie serves it over rice, quinoa or mashed potatoes, with the pan sauce spooned over the top. Steamed broccoli or snap peas can go into the dish for the last ten minutes so there is nothing else to wash up. For a thicker sauce, tip it into a small saucepan and simmer it for three to five minutes while the chicken rests.
Leftovers keep well in the fridge for up to four days, which makes this a useful Monday dinner that turns into Tuesday lunch.

Ingredients
- 6 bone-in, skinless chicken thighs (about 2–2.5 lbs)
- ¼ cup honey
- 3 tbsp soy sauce (low sodium)
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp fresh ginger, grated
- 1 tsp ground black pepper
- ½ tsp salt
- 2 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp brown sugar (optional, for extra caramelisation)
- 3 green onions, chopped (for garnish)
- 1 tbsp sesame seeds (optional, for garnish)

Method, step by step
- 1Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish.
- 2Make the sauce: in a bowl, whisk together the honey, soy sauce, minced garlic, olive oil, ginger, black pepper, salt, rice vinegar and brown sugar (if using).
- 3Prepare the chicken: pat the chicken thighs dry with paper towels. Place in the baking dish in a single layer.
- 4Coat: pour the honey garlic sauce over the chicken, turning each piece to ensure it's well coated. Spoon extra sauce over the top.
- 5Bake uncovered for 30–35 minutes, basting halfway through, until the chicken is tender and reaches an internal temperature of 165°F (74°C). For extra caramelisation, broil for the last 2–3 minutes.
- 6Garnish and serve: sprinkle with chopped green onions and sesame seeds. Spoon the sauce from the pan over the chicken before serving.
