Ingredients

  • 1 lb lean beef (sirloin, flank or tenderloin), thinly sliced against the grain
  • 2 tbsp olive oil (divided)
  • 4 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¼ cup low-sodium soy sauce (or coconut aminos)
  • 2 tbsp honey (or sugar-free alternative)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • 1 tbsp sesame seeds (for garnish)
  • 3–4 cups cooked brown rice, jasmine rice or cauliflower rice (for serving)

Method

    Prepare the beef: in a bowl, toss the sliced beef with 1 tbsp soy sauce, the cornstarch and black pepper. Let it marinate for 10 minutes.

    Make the sauce: in a small bowl, whisk together the remaining soy sauce, honey, rice vinegar, sesame oil and red pepper flakes (if using). Set aside.

    Cook the beef: heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add the beef in a single layer (work in batches if needed) and sear for 2–3 minutes until browned. Remove from the skillet and set aside.

    Cook the broccoli: in the same skillet, add the remaining olive oil. Add the broccoli and stir-fry for 3–4 minutes until bright green and slightly tender.

    Add the aromatics: add the garlic and ginger and stir-fry for 30 seconds until fragrant.

    Combine: return the beef to the skillet, pour in the sauce and toss everything together. Cook for 1–2 minutes until the sauce thickens and coats the beef and broccoli.

    Serve hot over rice, garnished with green onions and sesame seeds.
