Bobbie's tips: don't overcook the pasta — it finishes in the oven; add a splash of milk when reheating to bring the creaminess back. Keeps 4 days in the fridge; freeze up to 2 months. Method

  1. 1

Cook the pasta: preheat the oven to 375°F (190°C). Cook the pasta in salted boiling water until just al dente. Drain and set aside.

  2. 2

Make the sauce: melt the butter in a large saucepan over medium heat. Whisk in the flour and cook 1–2 minutes. Slowly whisk in the milk, chicken broth and cream. Simmer until thickened, about 5 minutes.

  3. 3

Add the cheese and seasoning: stir in 1 cup of the mozzarella, the Parmesan, Italian seasoning, garlic powder, salt and pepper until smooth.

  4. 4

Combine: add the cooked pasta and chicken to the sauce and mix until everything is well coated.

  5. 5

Bake: transfer to a greased 9×13-inch baking dish. Top with the remaining 1 cup mozzarella. Bake for 20–25 minutes until bubbly and golden on top.

  6. 6

Serve: let rest 5 minutes, garnish with parsley, and serve warm.
