Bobbie's kitchen notes: removing the chickpea skins makes the hummus ultra smooth; use ice-cold water for the creamiest texture; tahini is key — use a good quality brand for the best flavour; for roasted red pepper hummus, add 1–2 tbsp roasted red peppers when blending; for a spicier version, add cayenne or a pinch of chilli flakes; the flavour gets even better the next day. Serve with warm pita, fresh vegetables (carrots, cucumbers, bell peppers, celery, tomatoes), crackers, grilled chicken or falafel, in wraps, or on salads and grain bowls. Storage: fridge up to 5 days; freezer up to 3 months — thaw in the fridge and stir before serving. Method

  1. 1

Prepare the chickpeas: drain and rinse canned chickpeas. For extra smooth hummus, remove the skins (rub chickpeas in a clean towel — the skins will come off easily).

  2. 2

Blend the base: in a food processor, add chickpeas, tahini, lemon juice, garlic, cumin, salt, pepper, paprika and 2 tbsp olive oil.

  3. 3

Blend until smooth: blend for 2–3 minutes, pausing to scrape down the sides. Add ice-cold water, 1 tbsp at a time, until smooth and creamy.

  4. 4

Taste and adjust: taste and adjust seasoning. Add more lemon juice for brightness, salt for flavour, or water for a creamier texture.

  5. 5

Serve and garnish: spoon hummus into a bowl. Drizzle with olive oil, sprinkle with paprika, chopped parsley and sesame seeds. Add a few whole chickpeas on top.

  6. 6

Enjoy! Serve with warm pita bread, fresh vegetables, crackers, or use as a spread in wraps and sandwiches.
