Make ahead

Nonalcoholic when made with alcohol-free sparkling cider and club soda. Prosecco, sparkling wine, rum or bourbon versions are adults only. Tips: use ripe juicy pears and freshly squeezed citrus; chill at least 1 hour; steep spices longer (up to 2 hours) for deeper flavor; add sparkling ingredients just before serving; freeze cranberries in ice cubes. Make ahead: prepare the spiced base up to 3 days ahead, cool, strain and refrigerate; add sparkling cider and club soda just before serving. Store base airtight refrigerated up to 3 days. Variations: pomegranate juice and blackberries; spiced pear cider instead of nectar; prosecco with ½ cup spiced rum or bourbon; grapefruit slices for a citrus twist. Pair with roast turkey and herbs, stuffing with cranberry sauce, charcuterie, Brie with honey, butternut squash, pecan pie or gingerbread/spiced cookies.

Method

  1. 1

Make the spiced cranberry pear base: in a large pot, combine cranberry juice, pear nectar, orange juice, lemon juice, honey, rosemary, cinnamon sticks, cloves and star anise. Bring to a gentle simmer over medium heat. Reduce heat and simmer for 10–15 minutes, allowing flavors to blend. Remove from heat and let cool for 30 minutes. Strain (optional) if you prefer a smoother punch. Refrigerate for at least 1 hour (or up to 3 days).

  2. 2

Prepare the fruit: slice pears and oranges. Set aside a few slices for garnish and add the rest to the chilled punch base along with the fresh cranberries.

  3. 3

Assemble the punch: in a large punch bowl, combine the chilled punch base with the sliced fruit and cranberries.

  4. 4

Add the sparkle: just before serving, gently stir in sparkling cider and club soda. For an adult version, replace club soda with prosecco or a dry sparkling wine.

  5. 5

Serve and garnish: fill glasses with ice and ladle in the punch. Garnish with pear slices, orange slices, cranberries and a rosemary sprig.
