Bobbie's tips: cook the onions low and slow for the best flavor and sweetness; use full-fat mayonnaise and sour cream for a richer, creamier dip; let the onions cool completely before mixing to keep the dip thick; make ahead for even better flavor; for extra depth, add a splash of Worcestershire sauce. Keeps up to 4 days in the fridge in an airtight container. Nutrition per 2 tbsp, from Bobbie's card: about 90 calories, 9 g fat, 2 g carbohydrates, 1 g protein, 180 mg sodium.

Method

  1. 1

Caramelize the onions: in a large skillet, melt the butter over medium heat. Add the sliced onions and salt. Cook, stirring often, for 18–20 minutes, until deep golden brown and soft. Add the garlic powder and Worcestershire sauce (if using). Remove from the heat and let cool completely.

  2. 2

Make the dip base: in a large bowl, combine the sour cream, mayonnaise, onion powder, and black pepper. Mix until smooth and creamy.

  3. 3

Add the onions: stir in the cooled caramelized onions. Reserve a small amount of onions for topping if desired. Mix until well combined.

  4. 4

Chill for best flavor: cover and refrigerate for at least 1 hour (or up to overnight) to let the flavors blend.

  5. 5

Garnish: before serving, top with the reserved caramelized onions and chopped chives or green onions.

  6. 6

Serve and enjoy: serve with potato chips, crackers, pretzels, or fresh vegetables.
