Bobbie's tips: use wild-caught salmon for the best flavour, add a splash of white wine to the sauce for extra depth, swap the herbs for what you have (basil, chives or rosemary work well), or add ¼ cup heavy cream and 2 tbsp Parmesan for a creamy version. Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning
  • 1 lemon (zest and juice, divided)

For the garlic herb butter sauce

  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tbsp fresh lemon juice
  • ½ tsp red pepper flakes (optional)

  • Extra fresh herbs
  • Steamed vegetables, roasted potatoes, or a side salad

Method

    Prep the salmon: pat the salmon fillets dry with paper towels. Place on a plate and drizzle with olive oil. Season both sides with salt, pepper, garlic powder, onion powder, paprika and Italian seasoning. Add lemon zest from half the lemon.

    Sear the salmon: heat a large skillet over medium-high heat. Add a little olive oil. Place the salmon fillets skin-side down (if they have skin). Cook for 4–5 minutes until golden and crispy. Carefully flip and cook for another 3–4 minutes, or until the salmon is cooked through and flakes easily. Remove from the skillet and set aside.

    Make the garlic herb butter sauce: in the same skillet, reduce heat to medium. Add the butter and let it melt. Add the minced garlic and sauté for 30–60 seconds until fragrant (do not burn).

    Add the herbs and lemon: stir in the parsley, dill, thyme, red pepper flakes (if using) and lemon juice. Let the sauce simmer for 1–2 minutes.

    Return the salmon: place the salmon fillets back in the skillet and spoon the garlic herb butter sauce over the top. Let it simmer for another 1–2 minutes.

    Serve: transfer to plates, spoon extra sauce over each fillet, and garnish with fresh lemon slices and herbs. Serve with your favourite sides.
