Garlic Parmesan Baked Chicken
Juicy, flavourful and always a favourite — one dish, forty minutes.

Bobbie's tips: use freshly grated Parmesan for the best flavour and texture, add sliced mushrooms or spinach for extra flavour, swap the cream for chicken broth for a lighter version, or use thighs instead of breasts (increase the cook time to 35–40 minutes). Serve with roasted vegetables, mashed potatoes, rice or a fresh salad. Leftovers keep well in the fridge for up to 4 days.
Ingredients
- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 3 tbsp olive oil (divided)
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese (freshly grated for best flavour)
- 1 tsp Italian seasoning
- ½ tsp salt (or to taste)
- ½ tsp black pepper (or to taste)
- ½ tsp red pepper flakes (optional, for heat)
- 2 tbsp fresh parsley, chopped (plus more for garnish)
- 1 lemon, thinly sliced (optional, for baking)
- 1 cup heavy cream (for extra rich sauce, optional) or ½ cup chicken broth (lighter version)

Preheat the oven to 375°F (190°C).

Prepare the chicken: pat the chicken breasts dry with paper towels. If thick, pound to an even thickness (about ¾ inch) for even cooking. Place in a lightly greased 9x13-inch baking dish.

Make the garlic Parmesan mixture: in a bowl, combine 2 tbsp olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, black pepper and red pepper flakes (if using). Mix well.

Coat the chicken: brush the garlic Parmesan mixture all over the chicken breasts, making sure each piece is well coated.

Add lemon and liquid: arrange lemon slices on and around the chicken. Pour the heavy cream (or chicken broth) into the bottom of the dish for a creamy, flavourful sauce.

Bake uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown on top. For extra browning, broil for 2–3 minutes at the end (watch closely).

Garnish and serve: remove from the oven, sprinkle with fresh parsley, and let rest for 5 minutes. Spoon the sauce over the chicken before serving.
