Homemade Cottage Cheese
Fresh, high in protein and so easy to make — only 3 ingredients, no additives or preservatives.

Equipment: large heavy-bottom pot, thermometer (optional but helpful), fine mesh strainer or cheesecloth, large bowl, spoon or spatula, airtight container. Bobbie's tips: use whole milk for the creamiest texture (2% works too); do not boil the milk; for larger curds use lemon juice, for smaller curds use vinegar; rinsing removes the tangy flavor if desired; drain longer for a thicker, drier cottage cheese; add salt after draining, not before; store in a glass container for best freshness. Variations: herbed (add 1–2 tbsp chopped chives, dill or parsley and a pinch of garlic powder); sweet (add fresh berries, honey and a dash of vanilla extract); savory (add diced tomatoes, cucumbers and black pepper); spicy (add finely chopped jalapeños, a pinch of red pepper flakes and a little sea salt). Serving ideas: with fresh fruit and honey, on toast or bagels, in salads or grain bowls, as a high-protein snack, mixed into scrambled eggs, in dips (blend for a smoother texture), with vegetables and herbs, in pancakes, muffins or baked goods, or as a substitute for ricotta or cream cheese. Storage: airtight container in the refrigerator for up to 5–7 days; do not freeze (texture changes); always use a clean spoon. Method
- 1
Heat the milk: pour the milk into a large heavy-bottom pot. Heat over medium heat to 180°F (82°C), stirring occasionally to prevent scorching. Do not boil.
- 2
Add the acid: remove from heat and slowly stir in the lemon juice (or vinegar). Stir gently and let it sit for 5–10 minutes. The milk will separate into curds and a clear yellowish whey.
- 3
Strain the curds: line a fine mesh strainer with cheesecloth and place over a large bowl. Pour in the curdled milk and let it drain for 5–10 minutes for a soft cottage cheese, or up to 20 minutes for a thicker, drier texture.
- 4
Rinse and season: for a milder flavor, rinse the curds with cold water and let them drain again. Transfer to a bowl and stir in salt to taste.
- 5
Chill: refrigerate for at least 1 hour before serving to allow the flavors to develop.
- 6
Enjoy: serve plain or with your favorite toppings. Store in an airtight container in the refrigerator for up to 5–7 days.
