Contains alcohol — adults only. Card heading states 5 minutes total and 0 minutes cook (just mix), apart from the syrup preparation. Pitcher: mix in a large pitcher with ice, add sparkle just before serving and garnish with apple slices, rosemary and cinnamon sticks. Tips: fresh crisp apples give best flavor; homemade syrup makes a richer drink; cool syrup completely; steep up to 30 minutes for stronger spice; a large ice cube avoids fast dilution; cinnamon sugar makes a festive rim; use sparkling water for a lighter version. Variations: nutmeg or ginger; apple cider plus a splash of maple syrup instead of apple maple syrup; prosecco and orange bitters; caramel drizzle inside the glass. Mocktail: omit bourbon and use sparkling apple cider. Syrup keeps airtight refrigerated up to 2 weeks; cocktail without sparkle can be refrigerated up to 24 hours ahead. Pair with charcuterie, roast turkey/chicken, herb stuffing, Brie with honey, candied pecans, pumpkin appetizers, butternut squash or apple pie.

Method

  1. 1

Make the apple maple syrup: in a small saucepan, combine apple cider, maple syrup, cinnamon sticks, cloves, orange peel and lemon peel. Bring to a gentle simmer and cook for 10–15 minutes, allowing the flavors to infuse. Remove from heat, let cool and strain into a jar. Store in the refrigerator for up to 2 weeks.

  2. 2

Prepare the glass (optional): rub a lemon wedge around the rim of a rocks glass and dip into cinnamon sugar. Fill the glass with ice.

  3. 3

Make the cocktail: in a cocktail shaker, combine bourbon, apple maple syrup and fresh lemon juice. Shake well for 10–15 seconds.

  4. 4

Assemble: strain into the prepared glass filled with ice. Top with sparkling water or prosecco and gently stir.

  5. 5

Garnish and enjoy: add an apple slice, cinnamon stick, rosemary sprig and star anise.
