Method

  1. 1

Make the pomegranate rosemary syrup: in a small saucepan, combine pomegranate juice, honey, rosemary sprigs, orange peel, lemon peel and cinnamon stick. Bring to a gentle simmer and cook for 10–15 minutes, allowing the flavors to infuse. Remove from heat, let cool and strain into a jar. Store in the refrigerator for up to 2 weeks.

  2. 2

Prepare the glass (optional): wet the rim of a wine glass with a lemon wedge and dip it in sugar for a festive touch. Fill the glass with ice.

  3. 3

Make the cocktail: in a large wine glass, combine gin or vodka, pomegranate rosemary syrup and fresh lemon juice. Stir gently to combine.

  4. 4

Top with sparkling wine: add prosecco (or sparkling wine) and a splash of sparkling water. Stir lightly.

  5. 5

Garnish and enjoy: add pomegranate arils, an orange slice and a sprig of fresh rosemary. Cheers!
