Contains alcohol — adults only. Card heading states 5 minutes total and 0 minutes cook (just mix); cream mix takes 5–7 minutes warming plus cooling. The printed cream-mix yield is about 1 cup although the listed cream alone exceeds that; preserved for Bobbie to confirm. Pitcher: mix in a large pitcher with ice; stir well and serve over ice; garnish with whipped cream and cinnamon sticks. Tips: real pumpkin puree, not pie filling; chill mix; cold brew coffee ice cubes; nutmeg or cinnamon; cinnamon-sugar rim; half and half instead of heavy cream for a lighter version; make ahead. Variations: caramel and sea salt; bourbon instead of vodka; white or dark chocolate liqueur; replace vodka with 1 oz espresso for an iced coffee version. Mocktail: omit alcohol, use cold brew coffee and pumpkin spice cream mix. Cream mix keeps airtight refrigerated up to 1 week; mixed cocktail without ice can be made up to 24 hours ahead and refrigerated, stirring with ice before serving. Pair with pumpkin pie, pecan pie, spiced nuts, chocolate desserts, caramel cheesecake, gingerbread cookies, charcuterie, roast turkey or ham.

Method

  1. 1

Make the pumpkin spice cream mix: in a small saucepan, combine heavy cream, half and half, pumpkin puree, brown sugar, vanilla, pumpkin pie spice and a pinch of salt. Warm over low heat for 5–7 minutes, whisking until smooth and well combined. Let cool and store in the refrigerator for up to 1 week.

  2. 2

Prepare the glass: fill a rocks glass with ice. Optional: rim the glass with cinnamon sugar for an extra decadent touch.

  3. 3

Make the cocktail: add vodka and coffee liqueur to the ice-filled glass. Slowly pour the pumpkin spice cream mix over the back of a spoon or gently stir on top for a layered effect. Stir gently if desired.

  4. 4

Garnish and enjoy: top with whipped cream, a sprinkle of pumpkin pie spice and a cinnamon stick. Cheers!
